This test detects the presence and level of IgG against food digested proteins in the serum. Some of these incompletely hydrolyzed high molecular weight molecules can pass through the intestinal epithelial barrier, enter the bloodstream, and are recognized by the immune system as allergens and common antigens. The test can identify specific foods that cause so-called "non-IgE allergies", which are different from food (IgE) allergy and food (metabolic) intolerance.
